Step-by-step stir-fry

Stir-fries move fast. I like to have the sauce mixed and everything chopped before the pan gets hot.

1) Mix the sauce

In a small bowl, whisk together soy sauce, rice vinegar, citrus juice, honey, and chili crisp if using. If you want a lightly glossy sauce that clings to the cabbage, whisk the cornstarch and water in a separate cup and keep it nearby. Add it right before you pour the sauce into the pan so it does not settle.

2) Heat the pan properly

Set a large skillet or wok (a 12-inch skillet is ideal) over medium-high heat. When a drop of water sizzles and evaporates right away, add the neutral oil.

3) Aromatics, quickly

Add scallion whites, garlic, and ginger. Stir for 20 to 30 seconds, just until fragrant. Do not let the garlic brown. If your pan is running extra hot, lower the heat for a moment while you stir.

4) Cook the ribs first

Add the cabbage ribs and carrots. Stir-fry for 2 to 3 minutes, until the ribs start to soften but still have crunch.

5) Add the leafy parts

6) Sauce and finish

Give your sauce a quick whisk. Pour it in and stir constantly for 30 to 60 seconds. If using the cornstarch slurry, you will see it tighten slightly and coat the vegetables. Turn off the heat, drizzle in toasted sesame oil, and add scallion greens and sesame seeds.

  • Tofu: Press and cube firm tofu. Crisp it in oil until golden, remove, then add back at the end. A sprinkle of salt on the tofu while it cooks makes a big difference.
  • Egg: Push veggies to the side and scramble 2 eggs in the empty space, then toss everything together with the sauce.

Yes. Slice it thinly and plan on an extra 2 to 4 minutes of cook time. Green cabbage is sturdier, so it needs a bit longer to turn tender.
