Some mornings, even “quick prep” feels like a lot. This is my favorite kind of slow cooker cooking: true dump-and-go. No pre-browning. No chopping. No sautéing aromatics first. Just open, dump, stir, and let the slow cooker do its cozy magic.
All five recipes below are built around supermarket shortcuts (pre-minced garlic, frozen chopped onions, bagged slaw, jarred salsa) so you can get dinner going in about five minutes flat.
Quick safety note: For best results, keep your slow cooker between 1/2 and 2/3 full, and always cook poultry to a safe internal temperature (165°F).

What counts as true dump-and-go?
If you are wondering whether a recipe is really dump-and-go, here is my test: Can you make it with only a can opener, measuring spoons, and something to stir with? If it asks you to brown meat, chop vegetables, or cook pasta separately, it might still be easy, but it is not the kind of hands-off morning prep we are doing today.
My favorite no-chop helpers
- Frozen chopped onion or frozen pepper and onion blend
- Jarred minced garlic (yes, I use it, and yes, I add extra)
- Baby carrots (no peeling, no slicing)
- Bagged coleslaw mix (instant cabbage and carrots)
- Rotisserie chicken (for the one recipe where we add cooked chicken at the end)
- Microwave rice or instant mashed potatoes for serving

Recipe 1: Salsa Verde Chicken Tacos
This one is my “panic button” dinner. Chicken plus salsa verde makes its own sauce, and the slow cooker does all the shredding work (well, almost).

Ingredients (serves 4 to 6)
- 2 to 2 1/2 lb boneless skinless chicken thighs (or breasts)
- 1 (16 oz) jar salsa verde
- 1 cup frozen chopped onion
- 2 tsp jarred minced garlic
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1/2 tsp kosher salt
- 1 (4 oz) can diced green chiles (optional)
Dump-and-go steps
- Add chicken to the slow cooker.
- Pour in salsa verde. Sprinkle in frozen onion, garlic, cumin, oregano, salt, and green chiles (if using).
- Cook on LOW 6 to 7 hours or HIGH 3 to 4 hours, until the chicken shreds easily and reaches 165°F.
- Shred right in the slow cooker with two forks. Taste and add more salt if needed.
How to serve
- Tucked into warm tortillas with shredded cabbage (bagged slaw mix is perfect)
- Over microwave rice with black beans
- On top of nachos with cheese and pickled jalapeños
Maya tip
If you use chicken breasts, they can dry out faster. Keep them nestled in the sauce and shred as soon as they are tender.
Recipe 2: No-Chop BBQ Pulled Pork
Sweet, tangy, and absolutely made for messy sandwiches. The “prep” here is basically opening two bottles.

Ingredients (serves 6 to 8)
- 3 to 4 lb pork shoulder (pork butt), boneless
- 1 1/2 cups barbecue sauce
- 1/2 cup apple cider vinegar
- 2 tbsp brown sugar
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp black pepper
Dump-and-go steps
- Place pork shoulder in the slow cooker.
- Add barbecue sauce, vinegar, brown sugar, Worcestershire, paprika, salt, and pepper. Stir or whisk right in the slow cooker. If that feels awkward, shake the sauce ingredients together in a jar and pour over the pork.
- Cook on LOW 8 to 10 hours or HIGH 5 to 6 hours, until it falls apart easily.
- Shred. If you want a thicker sauce, scoop the cooking liquid into a saucepan and simmer for 10 to 15 minutes, then stir it back in. (Some slow cookers are not meant to run uncovered, so check your manual before trying any lid-off reducing.)
How to serve
- On toasted buns with bagged coleslaw mix
- Stuffed into baked potatoes with extra sauce
- In quesadillas with cheddar
Maya tip
Do not worry if there is a fatty cap. After cooking, it lifts right off in big pieces before you shred.
Recipe 3: Pantry Vegetarian Chili
This is the pantry dinner I make when I want something hearty, wholesome, and hands-off. It is also a great “late start” slow cooker meal because it tastes good even on HIGH.

Ingredients (serves 4 to 6)
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can pinto beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (28 oz) can crushed tomatoes
- 1 cup jarred salsa (any heat level)
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp kosher salt
- 2 tsp jarred minced garlic (optional but encouraged)
Dump-and-go steps
- Add everything to the slow cooker and stir well.
- Cook on LOW 6 to 8 hours or HIGH 3 to 4 hours.
- Taste and adjust: more salt for “pop,” more chili powder for depth, more salsa for brightness.
How to serve
- With tortilla chips and shredded cheese
- Over microwave rice
- With a dollop of Greek yogurt or sour cream
Maya tip
If you like a thicker chili, crack the lid for the last 30 minutes if your model allows. Otherwise, just let it sit uncovered for a few minutes before serving, and it will thicken a bit as it cools.
Recipe 4: Creamy Italian Chicken and Potatoes
This one feels like comfort food you would get at a potluck, but the ingredient list is basically “open, dump, and trust the process.”

Ingredients (serves 4 to 6)
- 2 lb boneless skinless chicken breasts or thighs
- 1 1/2 lb small baby potatoes (the kind you can leave whole, no chopping needed)
- 2 cups baby carrots
- 1 (0.7 oz) packet dry Italian dressing seasoning
- 1 (10.5 oz) can cream of chicken soup
- 1/2 cup chicken broth
- 2 tsp jarred minced garlic
- 1/2 cup sour cream (stir in at the end)
Dump-and-go steps
- Add chicken, potatoes, and carrots to the slow cooker.
- Top with Italian seasoning packet, cream of chicken soup, broth, and garlic. Stir gently around the chicken.
- Cook on LOW 6 to 7 hours or HIGH 3 to 4 hours, until the potatoes are tender and the chicken is cooked through (165°F).
- Turn the slow cooker to WARM and let it sit 5 minutes. Then stir in sour cream. Shred the chicken lightly or leave in chunks.
How to serve
- With a simple bagged salad
- Over egg noodles (microwaveable pouches work great)
Maya tip
If your slow cooker runs hot, use thighs. They stay juicy and forgiving.
Recipe 5: Honey Garlic Meatballs and Pineapple
Yes, we are using frozen meatballs, and yes, they are a weeknight gift. This is sweet-savory, a little sticky, and fantastic over rice.

Ingredients (serves 4 to 6)
- 1 (28 to 32 oz) bag frozen fully cooked meatballs
- 1 (20 oz) can pineapple chunks in juice, undrained
- 1/2 cup soy sauce
- 1/3 cup honey
- 1/4 cup ketchup
- 2 tsp jarred minced garlic (or more, always more)
- 1 tsp grated ginger from a tube (optional)
Dump-and-go steps
- Add frozen meatballs to the slow cooker.
- Pour in pineapple with juice.
- Add soy sauce, honey, ketchup, garlic, and ginger (if using). Stir.
- Cook on LOW 4 to 5 hours or HIGH 2 to 3 hours, stirring once if you happen to be home. Meatball brands vary, so cook until they are steaming hot throughout (165°F is a good safety target).
How to serve
- Over microwave jasmine rice with sliced green onions (optional)
- As a party-style bowl with toothpicks
Maya tip
If you want it less sweet, start with 1/4 cup honey and add more at the end to taste.
5-minute morning game plan
Here is how I keep dump-and-go mornings actually calm:
- Line up ingredients first on the counter. Then everything goes in quickly.
- Use slow cooker liners if they make your life easier. No guilt, just convenience.
- Keep a slow cooker kit basket with measuring spoons, can opener, and a silicone spatula.
- Label leftovers right away. Future-you deserves that kindness.

FAQ
Is it safe to put frozen chicken in a slow cooker?
I do not recommend starting with frozen chicken in a slow cooker. For food safety, it is best to start with thawed chicken so it heats through quickly and evenly. If your chicken is frozen, thaw it in the fridge overnight, or use a fast thaw method according to your appliance guidelines.
Do I need to add liquid every time?
Not always. Ingredients like salsa, canned tomatoes, soup, pineapple, and barbecue sauce provide plenty of moisture. If your recipe looks dry going in, add 1/4 to 1/2 cup broth or water.
Can I dump everything in the night before?
You can assemble many of these in the slow cooker insert, cover, and refrigerate overnight. In the morning, place the insert into the base and start cooking. If your insert is very cold, give it 10 to 15 minutes on the counter first so the temperature change is gentler.
How do I prevent mushy vegetables?
Use sturdier veggies (baby carrots, small potatoes) for long cooks. If you want green beans or peas, stir them in during the last 30 to 60 minutes on HIGH.
My gentle challenge
Pick one of these for tomorrow morning and set the ingredients out tonight. That is it. Five minutes, one slow cooker, and dinner is basically handled. And if you add an extra spoonful of garlic, I will never tell.
